    Lemon-Blueberry Pound Cake

    This cake can be made with just the lenon or just with blueberries and be just as good.


    List of Ingredients


    • 1cup butter
    • 3 cups sugar
    • 6 eggs
    • 1 tsp lemon extract
    • 3 cups flour(sifted)
    • 1/2 tsp salt
    • 1 cup sour cream
    • 1/4 tsp baking soda
    • 2 cups blueberries


    Instructions


    1. cream butter;gradually add sugar; beat until fluffy
    2. add eggs one at a time until yellow disappears
    3. add lemon
    4. combine flour, salt and soda
    5. add flour mixture alternately with sour cream;beginning and ending with flour
    6. fold in blueberries just before putting batter in pan
    7. Bake in 12 inch tube pan or bundt pan at 325 for 90 minutes


    Final Comments


    If you bake this cake for 80 minutes a slight indentation will occur. It will appear as if all the lemon did not cook. Tastes great. All the guys at my husbands work place ask for the "not done cake", they love it
