    Can be used for carrot cake also, Carrot cake> substitute 3 cups of shredded carrots for the apples

    List of Ingredients




    1 ½ cups sugar
    1 cup vegetable oil
    3 eggs
    2 cups flour
    1 ½ Tsp. ground cinnamon
    1 Tsp baking soda
    1 Tsp. vanilla
    ½ Tsp salt
    ¼ Tsp. ground nutmeg
    3 cups of chopped apples
    1 cup coarsely chopped nuts ( Optional)
    ½ cup raisins ( Optional )

    Recipe



    Heat oven to 350F.
    Grease and flour rectangular pan, 13X9X2 inches.
    Mix sugar, vegetable oil, and eggs until blended: beat one minute,.
    Stir in remaining ingredients except apples, nuts and raisins, beat one minute, Stir in apples, nuts, and raisins.
    Pour into pan.
    Bake until wood pick inserted in center comes out clean, 35-45 minutes.


    I usually make them in small loaf pans, this way I freeze some for the holidays. They do freeze well; just make sure they are totally cooled off. Also never freeze a cake that is frosted.


    Cream cheese frosting:
    1 pkg. 8 oz. cream cheese softened
    1 TBLS. Milk
    1 Tsp. vanilla
    4 cups powdered sugar.
    Beat cream cheese, milk and vanilla on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time,until smooth and of spreading consistency.
