Oatmeal Raisin Cookies

1/2 cup sugar
1/4 cup light brown sugar, packed
1/3 cup reduced calorie margarine
1 large egg
1 tsp. vanilla extract
1 cup all purpose flour
1 cup uncooked old fashioned oats
1/2 cup raisins
Recipe
Preheat oven to 350.
Coat 2 large baking sheets with cooking spray.
In a large mixing bowl, combine both sugars, margarine, egg, and vanilla; beat with an electric mixer on med. speed until smooth and creamy. With the mixer on low speed, beat in flour and oats; fold in raisins.
Drop mixture by scant tablespoons onto prepared baking sheets. Bake until puffed up and gold brown around the edges, about 15-20 min.
Cool on baking sheets for 3 mins.; transfer to wire racks to cool completely. Yields 2 cookies per serving.
