    Only points for recipe is for the fish. Makes 4 four ounce servings

    List of Ingredients




    1 lb fish filets (Sole, tilapia, pickerel, or perch are good choices)
    1 med tomato, chopped
    1/2 cup red pepper, chopped
    1 cup sliced mushrooms
    3 spring onions, sliced
    ¼ tsp salt
    1/8 tsp pepper
    1/8 tsp basil or 1 tsp fresh chopped basil

    Recipe



    Place fish in a microwave safe dish.

    Mix all other ingredients in a bowl and spoon over fish. Microwave on high for 5-7 minutes depending on how thick the fish fillets are.

    Check opaqueness after 5 minutes (For thin fillets, it may only take 3 ½ minutes,).
