    LEMON COOKIE BARS

    List of Ingredients

    Crust:
    3 cups flour
    1 1/2 cups sugar
    1 1/4 cups butter or margarine

    Filling:
    1 can (21oz.) Lemon Pie Filling

    Topping:
    3 egg whites
    1/4 cup sugar
    1 1/2 cups flake coconut

    Recipe

    In a medium bowl, combine flour and sugar. Cut in butter or margarine until mixture looks like coarse crumbs. Press mixture evenly with a fork in bottom of a jelly roll pan. Spread the lemon pie filling over crust. Beat egg whites until form peaks. Fold in 1/4 cup sugar, and flake coconut. Spread over filling. Bake in preheated oven at 350 degrees until coconut is golden and topping is bubbly, about 45 to 60 minutes. Cool on rack; cut into 2 inch squares. Makes 24 bars.
