    Beef Quiche in a Parmesan Crust

    List of Ingredients




    Parmesan pie shell*
    1 jar (2 1/2 ounces ) dried beef, slivered or chopped
    1 can (3 ounces) chopped mushrooms, drained
    1 small onion, chopped
    2 tablespoon butter or margarine
    3/4 cup (3 ounces) shredded Swiss cheese
    2 tablespoons flour
    3 eggs, slightly beaten
    1 cup milk
    Few dashes Tabasco sauce

    Recipe



    Prepare pie shell. Bake at 375 degrees for 10 minutes. In skillet, saute beef, mushrooms and onion in the butter till onion is tender. Spoon into partially baked pie shell. Toss together cheese and flour. Sprinkle over beef mixture. Combine eggs, milk and Tobasco sauce. Pour into pie shell. Bake at 350 degrees for 40 minutes or till knife inserted near middle comes out clean. Let stand for about 5 minutes before servng.

    *Parmesan Pie Shell: In bowl, mix 1 1/2 cups flour and 1/2 cup grated parmesan cheese. Cut in, 1/4 cup butter or margarine and 1/3 cup shortening till mixture resembles size of small peas. Sprinkle with 2 tablespoons water to hold particles together. Roll to 1/8-inch thickness. Ease into 9-inch pie pan. Flute edges with fork.
