    Butterscotch Meringue Cake

    List of Ingredients




    1 1/3 cups Bisquick baking mix
    3/4 cup sugar
    3 tablespoons butter, softened
    1 large egg
    3/4 cup milk
    1 teaspoon vanilla

    MERINGUE:
    1 large egg white, beat until frothy
    3/4 cup (packed) light brown sugar, gradually add to beating egg white
    1/2 teaspoon vanilla
    Preheat oven to 350 degrees. Grease and flour 8x8x2 pan. Recipe doubles beautifully--use 9x13" pan.

    Mix Bisquick and sugar. Add Butter, egg, 1/4 cup of the milk. Beat one minute at medium speed. Stir in gradually the remaining milk and vanilla. Beat 1/2 minute more. Bake 35-40 min. Remove from oven but not from pan. Turn oven up to 400 degrees.

    Beat egg white until frothy. Gradually add brown sugar to beating egg whites. Add vanilla and beat until very stiff. Spread over warm or cold cake, sealing meringue to edges of pan. Bake 8-10 minutes until golden brown.
