Corn Puffins
List of Ingredients
Nonstick cooking spray
2 tablespoons cornmeal
3 eggs, beaten
1 cup milk
1 tablespoon butter, melted
1 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup fresh or frozen whole kernal corn,thawed
1/4 cup thinly sliced green onions

Thoroughly spray 12, 2 1/2 inch muffin cups with cooking spray. Sprinkle botttom and sides of each with cornmeal;set aside.
In a medium bowl beat eggs, milk, and butter with a rotary beater or wire whisk until combined. Add flour, salt, and pepper; beat till smooth. Stir in corn and green onions. Spoon batter into prepared cups, filling each 2/3-3/4 full. Bake in a 425 degree oven about 30 minutes or till deep golden brown. Remove from muffin cups and serve immediatley. Makes 12
