    Cajun Cake

    List of Ingredients




    2 Cups flour
    1 1/2 Cups sugar
    2 teaspoon baking soda
    1 large can crushed pineapple
    2 eggs beaten

    Recipe



    Mix above ingredients and bake in 12 x 9 greased and floured pan at 350 degrees for 25 minutes.

    While cake is baking make frosting:
    1 stick butter
    1 cup sugar
    1 small can of evaporated milk
    1 teaspoon vanilla
    1 cup flake coconut
    1 cup pecan chopped

    Bring butter sugar and milk to boil for 10 minutes. Add vanilla, coconut and pecans. Frost cake while still warm.
