    EASY BUTTER CAKE, BROWNED BUTTER ICING

    List of Ingredients




    This is even better served the next day

    2 1/4 cups flour
    1 1/2 cups sugar
    1 cup butter, softened but not melted
    1 cup buttermilk (may substitute 1 tablespoon vinegar and enough milk to equal 1 cup)
    4 eggs
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 1/2 teaspoon vanilla
    Icing:
    6 tablespoon butter
    3 cups powdered sugar
    1 1/2 teaspoon vanilla
    3-4 tablespoon milk

    Recipe



    Heat oven to 350 degrees. Combine all cake ingredients in large bowl. Beat on low until moistened. Beat on high, scraping bowl often, until smooth (2-3 minutes). Batter may look slightly curdled. Pour into greased 13x9 inch pan. Bake 30-40 minutes or until toothpick inserted in center comes out clean. Cool completely.

    Icing: In a 1 quart saucepan melt 6 tablespoons butter over medium heat. Continue cooking, stirring constantly, until butter just starts to turn golden (5-6 minutes). Butter will get foamy and bubble. Remove from heat and cool for 5 minutes. Combine browned butter, powdered sugar and vanilla in bowl. Beat on medium speed gradually adding milk until smooth & spreadable. Frost cooled cake.
