    Editor's Choice Pineapple Cake

    List of Ingredients




    In a large mixing bowl beat 2 eggs till they're light and fluffy. Add the contents of a 20 ounce can of crushed pineapple (undrained), 2 cups of flour, 1 cup brown sugar, 1 cup granulated sugar, and 2 teaspoons baking soda. Mix these ingredients well by hand. (If you use an electric mixer, too much air gets beaten in and there's a very good chance that the cake will fall.) Then stir in 1 cup of chopped walnuts, and spread the contents of the bowl evenly in an ungreased 13x9x2 inch baking pan. Bake in a 350 degree oven for 45-50 minutes, or till a toothpick comes out clean. After the cake cools, cover it with a Cream Cheese Ginger Frosting, then sprinkle with additional walnuts.

    To make the frosting: in a small mixer bowl beat together a 3 ounce package of softened cream cheese, 1/4 cup of butter or margarine, and 1 teaspoon vanilla. (This time you can use the electric mixer; it's easier.) Then gradually add 2 cups of powdered sugar and 1/2 teaspoon of ground ginger, and continue beating till it has a nice consistency.
