Elegantly Easy Apple Cake

This cake has a pound cake texture and is so easy.
3 cups peeled tart apples, sliced 1/4 inch thick
2 tablespoons lemon juice, divided
1 cup + 3 tablespoons sugar
2/3 cup butter/margerine, softened
4 eggs
1-1/2 teaspoons vanilla
2 cups flour
1/8 teaspoon saltRecipe
In a bowl combine the apples, 3 tablespoons sugar and 1 1/2 tablespoons lemon juice. Let stand for 1 hour. In another bowl; cream butter and the remaining sugar. Add eggs 1 at a time, beat well after each addition. Add vanilla and the remaining lemon juice. Combine flour and salt; add gradually to creamed mixture and beat till smooth. Pour into a greased 9x5x3 inch loaf pan. Drain apples and reserve liquid. Push apple slices gently into batter with the back of a spoon. Placing them close together. Bake at 300 degrees for 45-60 minutes or till toothpick inserted near middle comes out clean. Upon removing from oven drizzle the remaining juices over the cake. Cool for 10 minutes on a wire rack, remove from pan.
Serve warm, topped with whipped topping, if desired. Serves 10-12
