    Greek Walnut Cake

    List of Ingredients




    Cake:
    2 cups flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/4 teaspoon ground cloves
    1 cup butter or margarine, softened
    1 cup sugar
    6 large eggs
    1 tablespoon grated orange peel
    8 ounces plain low fat yogurt
    1 cup wlanuts, toasted and finely chopped

    Syrup:
    1 cup sugar
    1/2 cup honey
    3/4 cup water
    freshly grated peel of 1 orange

    Preheat oven to 350 degrees. Grease 13x9 inch metal baking pan. Prepare cake: In large bowl, stir together flour, baking powder, baking soda, salt, cinnamon and cloves. In large bowl, with mixer at medium speed, beat butter and sugar till light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in orange peel. Reduce speed to low; add flour mixture altenately with yogurt, beginning and ending with flour mixture. Fold in walnuts.

    Spoon batter into prepared pan, and smooth with rubber spatula. Bake 35-40 minutes, till toothpick inserted in center of cake comes out clean. Cool in pan on wire rack.

    Meanwhile, prepare syrup: In 1 quart saucepan, stir together sugar, honey, water, and orange peel. Bring to boiling over medium heat, stirring constantly. Simmer 5 minutes. Spoon lukewarm syrup over cake. Cool before slicing. Makes 16 servings.
