    Paul Newman's Graham Cracker Cake

    List of Ingredients




    1/2 cup butter or margarine
    2 cups graham cracker crumbs
    1 cup sugar
    2 tablespoons flour
    1 cup milk
    2 teaspoons baking powder
    1/4 teaspoon salt
    3 egg yolks
    3 egg whites, beaten stiff
    1 cup blanched almonds
    1 teaspoon vanilla
    Apricot whip frosting*

    Recipe



    Cream butter and sugar, add egg yolks and beat thoroughly. Sprinkle flour over graham cracker crumbs; add baking powder, milk and salt alternatley. Fold in egg whites, mix lightly and add nuts. Bake in 2 greased and floured pans for 30 minutes at 350 degrees.

    *Apricot Whip Frosting
    2/3 cup heavy cream, whipped
    2/3 cup apricot pulp
    1/2 teaspoon vanilla

    Puree apricots in blender; cook puree in juice from apricots until fruit thickens to jam. Chill. Fold whipped cream intojam. Add vanilla. Spread over cake. Keep refrigerated till ready to use.
