    Silver Cake

    List of Ingredients




    1/2 cup shortening
    1 cup granulated sugar
    4 egg whites, unbeaten
    2 cups sifted cake flour
    3 teaspoons baking powder
    1/4 teaspoon salt
    1/2 cup milk
    1 1/4 teaspoon vanilla or 3/4 teaspoon vanilla and 1/2 teaspoon of any another desired extract.

    Beat shortening on medium speed until fluffy and creamy, then add sugar gradually while continuing to beat until light. Add egg whites, one at a time, beating vigorously for one minute after each addition. Sift together flour, baking powder, salt and add alternately in thirds with the combined milk and extracts, beating well after each addition.

    Bake in a greased and floured cake pan about 9x9x2-inches in a preheated 350 degree oven for 50-60 minutes or until done. Or bake in 2 greased and floured 9-inch layer cake pans in a preheated 375 degree oven for 25 minutes or bake in 3-8 or 9-inch pans at 375 degree for 15-20 minutes.
