    RHUBARB PUDDING

    List of Ingredients




    1/2 cup sugar
    1/4 cup butter
    1 cup flour
    pinch salt
    1/2 cup sour milk* (or I've used buttermilk)
    1 teaspoon baking powder
    1 teaspoon soda

    Recipe



    Mix all and put in DEEP greased pan or casserole. Cut up 2 1/2 to 3 cups rhubarb on top. Sugar 1 1/4 cups. Dot with butter. Pour 1 cup boiling water over all and bake 350 degrees for 50-60 minutes.

    *Add 1 Tablespoon vinegar in milk to make it sour.
    Sprinkle a little nutmeg over rhubarb. Also, use a SCANT cup of water. If it gets too brown, cut heat to 325 degrees for the last 10 minutes or so.
