    Beer-Braised Sausages

    List of Ingredients




    2 pounds pork sausages
    4 medium onions, sliced thin
    12 ounces beer or ale
    1/2 teaspoon thyme, crumbled
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 sliced and sauted green bell peppers (optional)

    Recipe



    Prick sausages all over with fork. Cook in a large skillet, turning occasionally, until brown. Remove sausages to paper towel to drain. Pour off all but 3 tablespoons fat. Add onions and saute till carmalized, about 5 minutes. Add beer, thyme salt and pepper. Heat to boiling; lower heat; simmer, covered, 10 minutes. Return sausages to skillet. Cover and simmer 25 minutes. Serve with sauted peppers on fresh hard rolls, if desired.
