    Hot and Spicy Rice

    List of Ingredients




    6 slices bacon
    1/2 cup chopped green onions
    1 cup brown rice
    1 can (16 ounces or 2 cups) stewed tomatoes
    1 cup hot water
    1 teaspoon curry powder
    1/2 teaspoon salt
    1/4 teaspoon each- Tabasco sauce and cayenne pepper
    1/2 cup chopped red or green pepper
    1/2 cup chopped celery

    Recipe



    Fry the bacon till crisp. Remove and keep whole or crumble, if you wish. In 2 tablespoons of bacon fat, cook onions till soft. Stir in rice.

    Place tomaotes, water, curry powder, salt, Tobasco sauce and cayenne pepper in blender container. Puree. Add to the rice along with the green pepper and celery. Cover and cook over low heat for 10 minutes. Spoon into a 1 1/2 quart casserole. Cover and bake at 350 degrees for about 40 minutes. Stir a few times, but cover quickly to prevent moisture from escaping. Serve casserole topped with bacon. Serves 4.
