    Pork-Broccoli Casserole*

    List of Ingredients




    1 1/2-2 cups cooked, diced boneless pork
    2 packages(10 ounces each) frozen broccoli spears or chopped broccoli or 1 1/2 pounds fresh broccoli
    boiling salted water
    2 cups seasoned toasted croutons
    1 cup mayonnaise
    1/2 cup sour cream
    1/4 cup grated parmesan cheese

    Recipe



    Prepare pork from leftover roast or BBQ meat. Measure and set aside. Drop broccoli into boiling salted water. Cook 2 minutes. Drain thoroughly. If using fresh broccoli, break into flowerets and parboil 2 minutes. Drain. Sprinkle croutons in bottom of shallow, buttered dish. Top with broccoli. Mix pork with mayonnaise and sour cream. Spread over broccoli. Sprinkle with Parmesan cheese. Bake uncovered, at 350 degrees for 20 minutes or till lightly browned. Serves 4.

    *Asparagus and chicken may be substituted for the broccoli and pork.
