    Pork Lo Mein

    List of Ingredients




    5 cups water
    2 packages (3 ounces each) ramen noodles
    1/2 pound boneless pork, cut into thin strips
    2 tablespoons cornstarch
    2 tablespoons soy sauce
    1 tablespoon vegetable oil
    1/2 teaspoon ground ginger
    1 package (16 ounces) frozen stir-fry vegetables

    Recipe



    In a large saucepan, bring 4 cups water to a boil over high heat. Add noodles without seasonings packets and boil 2-3 minutes, or till just tender (reserve 1 seasoning packet to use later and 1 for another use). Rinse noodles with cold water, drain, and set aside.

    In a small bowl, combine pork and cornstarch and toss to coat well; set aside. In another small bowl, combine remaining 1 cup of water, soy sauce, reserved packet; mix well.

    In a large skillet or wok, heat oil over medium-high heat. Add pork and ginger and cook about 5 minutes, or till pork begins to brown, stirring constantly. Stir in soy sauce mixture and frozen vegetables. Cover skillet and cook 3-5 minutes, or till veggies are heated through. Stir in noodles and cook till heated through. Serve immediately.
