Sausage and Pepper Dogs
List of Ingredients
1 large onion, sliced
3 tablespoons olive oil
2 green peppers, cut into strips
2 sweet red peppers cut into strips
1 clove garlic, crushed
Salt and freshly ground black pepper to taste
8 sweet Italian sausages
2 tablespoons water
8 hot dog rollsRecipe
Heat the oil in a large skillet, add the onion and saut� until lightly browned. Add the peppers, along with the crushed garlic clove. Season with salt and pepper to taste. Cook, stirring occasionally, until the peppers are soft, about 20 - 25 minutes
While the peppers and onions are cooking, start the sausages. Prick them so they won't burst, then place in a large skillet with 2 tablespoons water and cook over medium heat until brown, about 15-20 minutes. Add a cooked sausage and a heaping layer of peppers and onions to each roll.
