    Potato Soup with Dumplings

    List of Ingredients




    Soup:
    1 cup diced selery
    1/2 cup water
    6 medium potatoes
    2 cups water
    1 medium onion, chopped
    2 teaspoon salt
    1/4 teaspoon pepper
    3 cups milk

    Dumplings:
    1 cups flour
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon sugar
    1 teaspoon parsley flakes
    1 egg
    1/2 cup milk

    Recipe



    Cook celery in 1/2 cup water just till tender. Do not drain. Peel and cube potates. Place in 4 quart saucepan with 2 cups water. Add cooked celery, onion, salt and pepper. Cook till potatoes are tender. Mash slightly to eliminate definate cubes. Add milk; set aside till dumplings are mixed.

    To make dumplings, sift together flour, baking powder, salt and sugar. Stir in parsley flakes. Beat egg; add milk; add to dry ingredients and mix just till moistened.
    Bring soup to a boil. Drop dumplings by tablespoonfuls into liquid so they don't touch. Turn heat to simmer, cover tightly; simmer gently 20 minutes. Don't lift lid! Makes 6 servings.
