Cheesy Shrimp Linguine
List of Ingredients
1 (16 ounce) package dried linquine
2 pounds unpeeled large fresh shrimp
1 small green belll pepper, chopped (about 1/2 cup)
1/4 cup chopped onion
2 celery ribs, chopped
3/4 cup butter, melted
1 teaspoon flour
1/4 cup chopped fresh parsley
1 (8 ounce) loaf process cheese spread, cubed
1 cup half and half

Cook pasta according to directions; drain and keep warm. Meanwhile, peel shrimp, and devein. Set aside. Cook green pepper, onion, and celery in butter in a large skillet over medium-high heat 5 minutes or till tender. Add flour, stirring till blended. Stir in shrimp and parsley; cook 6 minute or till shrimp turns pink, stirring often.
Reduce heat to medium; add cheese spread and half and half. Cook stirring constantly, till cheese melts. Combine pasta and shrimp mixture tossing gently; sprinkle with pepper and serve immediately. Serves 6
*Note: Substitute 2 cups chopped cooked chicken for fresh shrimp, but don't cook the chicken 6 minutes. Immediatley reduce heat and add the cheese spread and half and half. Proceed with step 3.
