    Shrimp and Corn Pie

    List of Ingredients




    6 tablespoons butter
    2 cups fine saltine cracker crumbs
    2 eggs
    2 cups milk, scalded
    2 teaspoon prepared mustard
    1/2 cup finely chopped celery
    1/4 cup finely chopped green pepper
    1 cup corn kernals
    1 pound raw shrimp, shelled and deveined
    salt and pepper to taste

    Preheat the oven to 325 degrees. Melt 4 tablespoons of the butter and blend into the cracker crumbs. Tossing and lightly stirring till the crumbs are completely coated. Reserve 1/2 cup of the crumb mixture and pat the remaining crumbs into the bottom and sides of a 3-quart baking dish. In a bowl, beat the eggs slightly. Add the remaining 2 tablespoons of butter to the hot milk, then add the eggs and mustard, stirring briskly. Stir in the celery, green pepper, corn, shrimp and salt and pepper.

    Pour into the crumb-lined baking dish and sprinkle the reserved crumbs evenly over the top. Bake for 30-40 minutes, or til the custard has set. Serve hot. Serves 6.
