    Barley Soup

    List of Ingredients




    2 pounds lean beef chuck steak cut into bit- size pieces
    2 tablespoons butter
    8 cups water
    4 teaspoons salt
    1/4 teaspoon pepper
    1 teaspoon peppercorns, whole
    4 beef bouillon cubes
    3 to 4 garlic cloves, finely minced
    1 teaspoon dried parsley
    1 large onion, chopped (or 1 teaspoon dried onion)
    1 can (28 ounce)whole tomatoes, drained and cut up
    1/2 cup chopped celery
    1 can (28 ounces) tomato sauce
    1 cup sliced carrots
    2 medium potatoes, diced
    1 cup frozen peas
    1/4 cup barley

    Recipe



    In a large pot, brown beef in melted butter. Add water, seasonings, garlic, parsley, onion, celery, tomatoes and tomato sauce. Bring to a simmer and simmer for 1 hour. Add carrots, potatoes and peas. Cook for another hour. Add barley and cook according to package directions. Serves 8 to 10.
