    Fresh Tomato Sauce

    List of Ingredients




    2 tablespoons extra virgin olive oil
    1 medium onion, chopped fine
    1 1/2 teaspoons oregano
    5 large fresh tomatoes, seeded and chopped
    1 teaspoon sugar
    1/2 teaspoon pepper
    1/2 cup chopped parsley
    salt to taste

    Recipe



    Heat the oil in a saute pan and add the onions. Cook, stirring, for 1 minute. Add the next 4 ingredients and cook slowly for 20 minutes. Add the parsley and salt. Serve over your favorite pasta. (Fresh is best, but a commercial pasta is good also.) Makes about 5 cups.
