    My cousin and I use to make $5 a pie selling them to our aunts at family reunions!

    List of Ingredients




    1 C. sugar
    1/4 C. flour
    3 Tbsp. cornstarch
    1/4 tsp. salt
    2 C. water
    3 egg yolks beaten
    1 tbsp. margarine
    1/4 C. lemon juice
    Meringue:
    3 egg whites
    6 Tbsp. sugar
    Pie shell, baked

    Recipe



    Heat together sugar, flour, cornstarch,salt and water. heat until very thick. Remove from heat and quickly add the egg yolks, lemon juice and margarine. (one tip is to add some of the heated mix to the egg yolks to warm them up before putting into the pan..that keeps them from frying in the pot when you add them to the mix)

    Meringue: Do not use a plastic bowl. In fact use a metal one that has been pre-chilled in the refrigerator.
    Beat egg whites until peaks begin to form. Slowly add sugar a little at a time. Once you get stiff peaks top it onto the pie filling. Bake in a 425 degree oven for about 5 minutes. Watch closely so the tips don't burn!
