Golden Butternut soup

List of Ingredients
3 leeks (white portion only)
4 medium carrots
5 Tbsp. margarine
3 lbs. butternut squash, peeled and cubed
6 cups chicken broth
3 medium zucchini, peeled and sliced
2 tsp. salt
1/4 tsp. pepper
1/2 tsp thyme
1 cup half and half cream
1/2 cup milkRecipe
In large kettle saute' leeks and carrots in butter for 5 minutes. Add squash, broth, zucchini, salt, pepper, and thyme. Bring to boil, then reduce heat to simmer until vegetables are tender. Cool to lukewarm. In blender puree soup in small batches until smooth. return to kettle. Add cream and milk. Mix well and heat through without boiling.
