    List of Ingredients


    • 1 1/2 to 2 pounds flank steak
    • 1 1/2 cups onion, chopped
    • 1 1/2 cup green or red bell pepper, chopped
    • 4 cloves garlic, minced
    • 1/4 cup shallots, minced
    • 1 (14.5 ounce) can diced tomatoes, undrained
    • 2 teaspoons beef bouillon granules
    • 1 teaspoon oregano
    • 1 teaspoon basil
    • 1 teaspoon garlic powder
    • 1 cup mushrooms, sliced
    • 3 cups hot, cooked linguine
    • 4 tablespoons parsley, chopped
    • 1/2 cup Parmesan cheese, grated


    Instructions


    1. Slice steak in thin slices across the grain, then cut slices into 2-inch pieces. Coat large nonstick skillet with cooking spray; place over medium-high heat until hot. Add steak and cook until browned, remove from skillet and set aside.

    2. Rinse skillet under hot water and dry. Coast again with cooking spray, add onion, green or red pepper, garlic and shallots to skillet and saute about 3 minutes or until tender. Return steak to skillet; add tomatoes and next 4 ingredients, stirring well.

    3. Cover meat mixture, reduce heat and simmer about 30 minutes. Add mushrooms and simmer another 30 minutes. Uncover and cook mixture an additional 15 minutes or until meat is tender. Serve meat over linguine and sprinkle with parsley and cheese. Serves 4.



    Final Comments


    If dry add an 8 ounce can of tomato sauce while simmering.
