    Texas Cowboy Bars

    List of Ingredients


    • Filling:
    • 1 cup (8 ounces) firmly packed pitted dates
    • 1 cup sugar
    • 1 cup water
    • 1 1/2 teaspoon finely grated lemon peel
    • Crust:
    • 1 1/2 cups flour
    • 1 cup firmly packed dark brown sugar
    • 1 1/2 cups oats (not instant)
    • 1/2 cup walnuts or pecans, chopped
    • 1/2 teaspoon salt
    • 2 sticks butter or margarine ( not spread), melted


    Instructions


    1. Heat oven to 350 degrees F. Line an 8" or 9" square pan with foil. Grease foil.

    2. Filling: Cut or snip dates in quarters. Place dates, sugar, and water in a heavy 2-qt saucepan over med. heat. Bring to a boil, stirring occasionally. Boil, stirrong occasionally for 12-15 min. till thick. Watch carefully toward end; mixture may bubbly and splash. Stir in peel and cool to lukewarm.

    3. Crust: Mix flour, sugar, oats, nuts and salt in a med. bowl. Stir in meled butter till well blended till well blended.

    4. Remove 1 cup crust mixture; reserve. Press remaining mix evenly over bottom of prepared pan. Spread filling and them sprinkle with reserved crust mix. Press gently into an evan layer.
    5. Bake 45 minutes or till bubbles form around edges. Cool in pan on wire rack 45 minutes, then cover and refrigerate at least 4 hours or firm. Turn out onto a cutting board, peel off foil and invert again. Cut into bars with a long thin knife.
