    Beer Glazed Potatoes

    List of Ingredients


    • 2 tablespoons olive oil, margarine or butter
    • 4 medium potatoes, cut into 1/2" wedges (about 1-1/4 pounds)
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 medium green sweet pepper, cut in 1/2" wedges
    • 1/2 cup chopped onion
    • 1/4 cup pale ale or lager or amber nonalcholic beer
    • 1/4 cup beef or chicken broth
    • 1 tablespoon brown sugar


    Instructions


    1. In a 12" skillet heat the oil over med. heat. Layer potatoes into skillet. Sprinkle with salt and pepper. Cook, uncovered, over med. heat for 15 min., turning occasionally. ( If potatoes begin to stick, add additional oil to skillet.) Stir in green pepper and onions. Cook and stir gently for 5-10 minutes more or until vegetables are tender. Add pale ale or beer, broth and brown sugar. Cook, uncovered, about 3-5 minutes more or until beer has thickened slightly.
