    Lean Fettuccini


    List of Ingredients


    • 8 ounces fettuccini
    • 1 teaspoon olive oil
    • 3/4 cup evaporated skim milk
    • 1/3 cup grated Parmesan cheese
    • 1/4 cup chopped green onions
    • 2 tablespoons chopped fresh basil
    • 1/4 teaspoon grated lemon peel
    • 1/2 teaspoon chopped garlic
    • white pepper


    Instructions


    1. Cook pasta according to package directions. Drain, immediately return to pot.

    2. Add oil, toss to coat. Add evaporated milk, cheese, onion, basil, lemon peel, garlic and pepper to taste.

    3. Cook over medium-high heat until bubbly, stirring constantly. Top with additional Parmesan, basil or lemon slices, if desired.

    4. Servings: 4
