    Lemon Shrimp with Curly Pasta

    List of Ingredients


    • 1/2 pound medium-size pasta
    • 1 tablespoon grated lemon zest, optional
    • 1/2 cup lemon juice
    • 2 tablespoons minced garlic
    • 1 1/2 tablespoons brown sugar
    • 1 1/2 teaspoons salt
    • 1 teaspoon fresh ground pepper
    • 1/2 teaspoon crushed red pepper
    • 1 1/2 cups thinly sliced green onions, including tops
    • 2 tablespoons olive oil
    • 1 pound medium-size shrimp, peeled and de-veined


    Instructions


    1. In a large pot of boiling water, cook pasta according to package directions.

    2. Meanwhile, in a large bowl, stir together lemon zest and juice, garlic, brown sugar, salt, black pepper, red pepper, green onions and oil. Add shrimp and toss to coat.

    3. Heat large nonstick skillet over medium-low heat until hot, about 4 minutes. Add shrimp mixture, cover and cook, stirring occasionally, about 4 minutes, or until shrimp turn pink.

    4. Drain pasta; toss immediately with shrimp mixture.
