    Summer Garden Pasta Salad

    List of Ingredients


    • 8 ounces spaghetti pasta, cooked drained and cooled
    • 1 1/2 cups chopped tomato
    • 1 cup cucumber, peeled, seeded and chopped
    • 1/2 cup fresh peas (or frozen, thawed)
    • 1/4 cup chopped red onion
    • 1/4 cup chopped red or green bell pepper
    • 1/4 cup freshly grated Parmesan cheese
    • Dressing:
    • 3 tablespoons red wine vinegar
    • 3 tablespoons fresh lemon juice
    • 2 tablespoons olive oil
    • 1 tablespoon Dijon mustard
    • 1 teaspoon sugar
    • 1/2 teaspoon dried basil
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • pinch cayenne
    • salt and freshly ground black pepper, to taste


    Instructions


    1. Combine pasta, vegetables and cheese in a large bowl. Combine dressing ingredients; mix well. Pour dressing over pasta mixture; toss well to coat. Chill until serving time. Toss again before serving.
