    Chili-Rub Chicken

    Recipe Introduction

    List of Ingredients

    • 2 teaspoons ground cumin
    • 2 teaspoons ground coriander
    • 2 teaspoons ground sweet paprika
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon cayenne
    • 1 teaspoon salt
    • 1 teaspoon grated fresh ginger
    • 2 tablespoons fresh lime juice
    • 3 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 jalapeno pepper, seeded and minced
    • 2 teaspoons chili powder
    • 2 tablespoons chopped fresh cilantro
    • 2 teaspoons brown sugar
    • 3 pounds chicken pieces or boneless skinless chicken breasts


    1. Combine all ingredients except chicken; mix well. Rub chicken pieces well with mixture and place in zip-top bag or in a bowl. Refrigerate several hours or overnight.

    2. When ready to cook, prepare grill using indirect medium heat. Grill chicken with lid closed, turning after 15 minutes. Cook until juices run clear, about 15 more minutes. Let stand 5 minutes before serving.

    3. Servings: 6
