    Orange Ginger Chicken with Cucumber Salad

    List of Ingredients

    • 1 teaspoon dark sesame oil
    • 1/2 teaspoon chili oil
    • 4 (4 ounce) boned and skinned chicken breast halves
    • 1/2 cup orange marmalade
    • 3 tablespoons low-sodium soy sauce
    • 1 tablespoon minced fresh ginger
    • 1 tablespoon water
    • 2 cloves garlic, minced
    • hot lo-mein noodles
    • chopped green onions
    • Cucumber Salad:
    • 2 cucumbers, sliced
    • 1/3 cup rice vinegar
    • 1 teaspoon sugar
    • 1/8 teaspoon red pepper flakes
    • 1 tablespoon chopped cilantro


    1. Heat oil in nonstick skillet over medium heat. Add chicken; cook 6 minutes on each side or till done. Add marmalade and remaining ingredients, cook 2 minutes or till thick and bubbly. Remove from heat.

    2. Slice chicken; arrange over cooked lo mein noodles. Sprinkle with chopped green onion. Serve with cucumber salad.

    3. Cucumber Salad: Combine all salad ingred. except cucumbers; mix well. Pour over sliced cucumbers.
