    Thai Pork Stir-Fry


    List of Ingredients


    • 1 tablespoon dark sesame oil
    • 1 (3/4 to 1 pound) pork tenderloin, cut into thin strips
    • 1 1/2 teaspoons minced garlic
    • 1 1/2 teaspoons fresh minced ginger
    • 8 ounces snow peas, about 2 1/2 cups
    • 1 red bell pepper, cut in thin strips
    • 1/4 cup soy sauce
    • 3 tablespoons jalapeno pepper jelly
    • 3 cups hot cooked rice or noodles
    • 3 tablespoons sliced green onions
    • 3 tablespoons chopped peanuts or cashews


    Instructions


    1. Heat oil in large nonstick skillet over medium-high heat. Add pork, garlic and ginger; stir-fry 1 minute. Add snow peas and bell pepper; stir-fry 3 minutes or until pork is no longer pink. Add soy sauce and jelly; stir-fry 2 minutes or until suace thickens. Seerve over rice or noodles; sprinkle with green onions and nuts.
