    List of Ingredients


    • 2 tablespoons butter or margarine
    • 2 tablespoons all-purpose flour
    • 1/4 teaspoon salt
    • 1/4 teaspoon dry mustard
    • 1/4 teaspoon freshly grated nutmeg
    • Dash pepper
    • 1 1/2 cups milk
    • 1 cup shredded Cheddar cheese
    • 1/2 cup process cheese food (Cheez-Whiz)


    Instructions


    1. In heavy 1-quart saucepan over medium heat, melt butter. Whisk in flour, salt, mustard, nutmeg and pepper until smooth.
    2. Gradually whisk in milk and cook until mixture almost boils, stirring constantly. Cook 2 minutes more. Add cheese and stir until it melts, taking care to watch mixture carefully as it scorches easily.
    3. Makes 2 cups.
