    Sliced Mangos with Crystalized Ginger

    List of Ingredients


    • 4 cups sliced peeled mango (about 3 pounds)
    • 2 tablespoons finely chopped crystalized ginger
    • 1 tablespoon thinly sliced fresh mint
    • 1 tablespoon fresh lime juice
    • 1 tablespoon honey


    Instructions


    1. Place all ingredients in a large bowl; toss gently to combine. Cover and chill 1 hour.

    2. Yield: 8 servings (serving size 1/2 cup). 114 cal, 0.4g fat, 0.8g pro, 19.9g carb, 0mg chol, 2.3g fiber, 0.6mg iron, 4mg sod, 20mg calc.
