    List of Ingredients




    2 T. red wine vinegar
    1/2 to 1 tsp Tabasco or 2 tsp hot sauce
    1 1/2 tsp salad oil or olive oil
    1 clove garlic, minced
    1/8 tsp pepper

    1 ripe avocado
    1, 15 oz can black-eyed peas
    1, 11 oz can shoepeg corn
    2/3 cup green onions, finely sliced
    2/3 cup fresh cilantro leaves, chopped
    3-4 Roma tomatoes, chopped
    Salt to taste

    Recipe



    1. Mix first ingredients together.
    2. Pit and scoop out avocado and dice into small cubes. Add to vinegar mixture and mix gently to coat.
    3. Drain peas and corn. Add peas, corn, onions, cilantro and tomatoes to avocado, mix gently.
    4. Salt to taste.
    5. Serve with tortilla chips or veggies
