    1 lb. salmon, skinned (not absolutely necessary) - best if 3/4 - 1" thick
    2 T. white wine
    2 T. shallots, minced
    salt and pepper

    Sauce for Baked Salmon
    1/3 c. low-fat mayonnaise
    1/2 c. chicken broth
    1 T. Dijon mustard
    1 T. olive oil
    1 T. lemon juice
    2 tsp. parsley
    2 tsp. tarragon
    2 tsp. chives (may substitute finely chopped green onions in necessary)
    2 tsp. chervil (I usually don't use this)

    Recipe



    Cut salmon into 4 pieces. Sprinkle with wine, shallots, salt and pepper. Place in a greased pan and cover with foil; bake for 15 -20 minutes at 425°. Serve plain or with the following sauce.

    Warm mayonnaise and chicken broth. Whisk in mustard. Add the rest of the ingredients.
    Serve warm over fish.
