    A good deal of Jewish-Italian food is based on Tuscan cooking originating from the Tuscany region of Italy. Soups, for example, are great favorites made with beans or pasta or cabbages, in particular "cavolo nero" a curly kale.
    Salads are essential. This salad is a favorite.

    List of Ingredients




    - 2 heads of red Chioggia chicory
    - 2 pieces of Romain lettuce
    - 2 small tart apples
    - 1 small can of mandarin oranges(or 2 small oranges)
    - 2 tbsp olive oil
    - 1tsp sugar
    - 1 tbsp mild mustard or ½ tsp mustard powder
    - salt and pepper
    - 2 tbsp finely chopped walnuts for garnish (optional)

    Recipe



    Wash and dry the red Chioggia chicory and Romain, then tear into edible size pieces and put in a salad bowl. Peel and slice the apple in thin slices and add to the salad. Chop mandarine oranges or tangerines and mix in mustard, oil , salt, pepper and sugar in a blender and pour over the salad. Toss well and serve chilled. Top with walnuts if desired.
