    Banana Foster French Toast

    List of Ingredients






    4 very large servings

    8 slices thickly sliced white bread

    1/4 cup softened cream cheese

    1 cup toasted pecans, crushed or processed in a food processor to

    medium coarse (not too fine)

    6 eggs, beaten

    1 tablespoon cinnamon

    1/2 teaspoon nutmeg

    1 tablespoon vanilla

    BANANA FOSTER SYRUP

    3 ripe bananas, sliced

    2 cups pancake syrup

    1/4 cup spiced rum

    GARNISH

    Whipped cream

    Slice bread slices through the middle, spread insides with cream cheese, then put back together. For best results, use a bread knife and slice evenly.

    Spread crushed pecans in a pie plate. In a bowl, beat together eggs, cinnamon, nutmeg and vanilla. Carefully dip bread in egg mixture, then coat both sides evenly with pecans. Place on a lightly oiled griddle or in a sauté pan on medium-high heat, and cook on both sides until a firm nut crust forms.

    Cut bread slices in half diagonally, and arrange on plates. Serve immediately, topped with warm Banana Foster Syrup and whipped cream.

    For the syrup: In a medium sauce pan, bring bananas, pancake syrup and spiced rum to a low boil. Simmer a few minutes until bananas are soft.
