    Mexican Eggs Supreme

    List of Ingredients






    Four 8" or 10" unrefrigerated flour tortillas
    6 large eggs
    4 ounces shredded sharp cheddar cheese
    1 small onion, chopped
    2 medium mild roasted green chiles, diced
    1 tsp. Mustard flour
    1/2 tsp. fresh ground black pepper
    pinch salt (optional)

    Recipe




    Preheat oven to 375 degrees;

    Use jumbo muffin pans;

    Lightly spray pans with PAM;

    Fold tortillas to fit each muffin hole (somewhat like an inverted cone with a flat tip);

    Place approximately 1/2 ounce cheese in each tortilla cone;

    Distribute evenly the diced chilis and chopped onion in each of the four cones;

    Beat eggs;

    Add mustard flour, salt and pepper to eggs;

    Distribute the egg mixture in each cone;

    Toss the remaining cheddar cheese on top of the egg mixture in each cone;

    Bake in preheated oven for 45 to 50 minutes until the edges of the tortillas are dark golden brown.
