    Makes 14 servings

    18.25-oz. pkg. white cake mix

    4-serving size box vanilla instant pudding mix

    4 eggs

    1 1/2 cups mashed ripe bananas (about 3 or 4)

    1/3 cup canola oil

    Broiled topping

    1/4 cup butter

    3/4 cup packed brown sugar

    1/4 cups half-and-half

    1 cup flaked coconut

    1 cup chopped pecans

    Grease a 9x13-inch pan. In a large mixing bowl combine cake mix, pudding mix, eggs, bananas and canola oil. Beat on medium speed for 2 minutes until smooth. Spread batter evenly in prepared pan. Bake in a preheated 350-degree oven for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Top with broiled topping (or any other icing you choose). Let cool at least 30 minutes in pan on wire rack before cutting. Broiled topping: In a saucepan melt butter. Stir in brown sugar, half-and-half, coconut and pecans. Preheat broiler. Spread topping evenly over hot cake. Broil 6 inches below element for about 3 minutes or until golden brown. Note: for a change of pace, you might try butterscotch or chocolate pudding mix. Nutritional information per serving: 446 calories, 23 g fat, (45 percent calories from fat), 65 mg cholesterol, 408 mg sodium.
