    Cajun Sweet Potato Pie

    Recipe Introduction


    This pie can be made in advance and refrigerated until you are ready to serve. It will keep for 5 days refrigerated. However, it is best served fresh. Great served with a fresh, heavy whipped cream topping.

    List of Ingredients




    1 9' pie shell, unbaked

    Filling:
    1 1/2 c. cooked Sweet Potatoes, mashed
    1/2 c half and half cream
    1/2 c. butter, melted
    3 large eggs, well beaten
    1/2 tsp baking powder
    1 tsp nutmeg
    1 tsp vanilla
    1/4 tsp ginger
    1 tsp grated lemon rind
    1/2 tsp salt
    1 c sugar
    1/4 c brown sugar

    Add all the ingredients and mix together very well until the batter is smooth and creamy. Pour into the pie shell and bake at 400 degrees for about 35 minutes or until the pie has set and is golden brown. Serve warm or chilled
