    3 eggs, slightly beaten
    1 tsp. vanilla
    1 c. persimmon pulp
    1/4 tsp. cinnamon
    1 c. sugar
    1 c. pecans, chopped
    1/4 tsp. salt
    1 pie shell, unbaked
    1/2 c. dark Karo syrup

    In a small mixing bowl, combine eggs, pulp, sugar, salt, syrup, vanilla and cinnamon; mix well. Pour into unbaked pie shell. Top with chopped pecans and bake at 350 degrees for about 40 minutes or until a knife inserted in pie comes out clean. Chill. Serve with whipped topping.
