Strawberry cake

Makes 1 cake

1 white or yellow cake mix

¾ cup cooking oil

½ cup fresh mashed berries

1 3-ounce package strawberry Jello

4 eggs, slightly beaten

¾ cup milk

½ cup chopped pecans

½ cup coconut (optional)


Mix all ingredients well and pour into an 11-by-14-inch glass baking dish. Bake in a preheated 325-degree oven for about 30 minutes (350 if pan is metal). Ice when cake is cool.


ICING

1 stick margarine or butter, softened

1 box confectioners' sugar

½ cup sliced strawberries

½ cup chopped pecans

½ cup coconut (optional)


Cream margarine and sugar until light. Stir in berries, pecans and coconut, if using. Add a tablespoon of milk if too thick to spread.
