    Chocolate-Covered Peanut Butter Bonbons

    List of Ingredients





    Makes 125 bonbons.

    1 cup butter

    2¾ cups powdered sugar

    2½ cups graham cracker crumbs,crushed very fine

    2 (3¼-ounce) cans flaked coconut

    1 (1-pound) jar peanut butter

    18 ounces semisweet chocolate chips

    3 tablespoons shortening

    Melt butter and blend with sugar and crumbs in a large bowl. Add coconut and peanut butter and blend with hands. Shape into tightly packed balls about the size of large marbles.

    In a double boiler, melt chocolate chips and shortening and heat through. (If you dip your candy in melted chocolate before it gets hot enough, too much chocolate will stay on candy). Spear the balls with toothpicks and dip individually in chocolate mixture to coat. Place the balls on waxed paper. Allow to set at room temperature for at least an hour. Store candies, tightly covered, between layers of waxed paper in the refrigerator
