Makes 8 (8 ounce) jars
2 (12 oz) pkgs fresh or frozen cranberries
4 cups sugar
1/2 cup water
Juice of 1 lemon
2 cups orange marmalade
1 (12oz) jar pineapple preserves
1/4 cup raisins (optional)
Place the cranberries in a large pan and add the sugar, water,and lemon juice. Place over medium-low heat, bring to a simmer,and simmer until the cranberries become tender and start to break down, about 25 minutes.
Pour in the orange marmalade and pineapple preserves and stir well. Add the raisins, if using. Reduce heat to low and cook until thickened like jelly, about 30 minutes. Remove the cranberry sauce from the heat, cool completely, then pour into 8-ounce mason jars. Refrigerate.
